Rodrigo de Freitas Silva grew up listening to his grandparents and the elders of the family share their experiences about coffee production. Living in a predominantly coffee-growing region the family naturally become coffee producers. In 2006 he founded the farm Santa Rita farm. As the years went by, they started getting more properties for the farm and in 2010 all knowledge from years and generations was put into producing high-quality, distinctive coffee that would create excellente coffees. During the post-harvest, drying is natural using controlled fermentation. Controlled fermentation is an innovative, scientific processing method that has shown excellent results. In the natural process, the coffee is laid out in drying yards and stays there for around 8 days. Soon after that, coffee is sent to a mechanical dryer for 2 more days to finalize the drying and regulate the humidity at 11.5%. After drying, the coffee is sent to suspended storage houses to rest for 30 days and later is processed after removing the husks and impurities.
