Drying time: 18 days Post-harvest process: Red cherries are harvested when the brix degrees of honey reach greater than 26 points. They are measured by cajuelas (the unit of measurement of the ICAFE), the cherries are washed, floaters are removed, and the resulting cherry is dried in shade on African beds in the family garden. Cherry is moved every 30 minutes to achieve homogeneous drying. While coffee is being turned, uneven or non-drying coffee is removed manually.
